I’m trying out a new way of making sweet potato casserole today. I love making twice baked potatoes and thought it might be tasty to make twice baked “sweet” potatoes. The topping is butter, brown sugar, pecans and cornflakes. Super healthy, right?! When ready to eat, I re-bake them in the oven at 350 for about thirty minutes and then broil the tops for two minutes (so that they are crispy and bubbly). I’m bringing some to a few friends for Valentine’s day. They are a meal and dessert :)
